Diabetes Recipes: Summer Watermelon Punch

A refreshing summer drink hits the spot, and is perfect for entertaining. Unfortunately, many fruity drinks are often laden with unnecessary added sugar. Try this fresh, sparkling drink.


1/2 seedless watermelon
1 pint of sparkling sugar-free water
Juice of 1/2 lemon
1 packet sugar-free watermelon gelatin


Cut open your watermelon and cut the melon into cubes. Place it in the freezer for several hours, or overnight.
In a blender, add frozen watermelon, sparkling water, lemon juice and gelatin. Blend until smooth (you may need to make it in batches depending on the size of your watermelon).
